So I thought defeating Deucalion is the end of the game, but now I have to fight Tiamat. Can someone give me advice on what level my team should be and if defeating Tiamat is the end of the game?

Level 75 - 80 approx. for beat Tiamat very easily. For train your ark quickly, make the Biteschool trick:

Go at the very south of Reijin (the very last point) and defeat all the biteschool who appeared and you make a great amont of xp.
