I really hope that this anniversary isn’t a “choice” kinda thing. It will be very annoying that i can only spend gems in one banner only after saving this many gems.

No, that’s never happened before except in guaranteed mythic banners where you’re only allowed to do one pack. The anniversary eggs tend to be festivals with more featured monsters than usual and, hopefully, will overlap so we can see the second one before having to spend gems on the first.
